Chichibu is the first Japanese whisky distillery opened in the new century (2008).
It is owned by Ichiro Akuto, grandson of the founder of Hanyu Distillery, which operated from 1946 to 2000. Chichibu is equipped with two small alembic stills, eight fermentation tanks made of Japanese Mizunara oak, and a mash tun, where the mash is stirred with a paddle. Its production capacity is a modest 60,000 liters of distillate per year. Chichibu produces whiskeys with different profiles, and its supply covers only a fraction of demand. The Paris Edition from 2022 presented here was intended exclusively for the Parisian La Maison du Whisky. It is a blend of nine barrels of whiskey aged for 6 to 9 years, mainly in bourbon barrels. The edition consisted of 1,900 bottles with 36 label designs depicting views of the Eiffel Tower from 36 different points.
Nose: rich, sea breeze, iodine, seaweed salad, lemons, pears, apricots, milk chocolate, walnuts, white pepper, ginger and peat smoke in the background.
Palate: stewed apples and pears, grilled pineapple, kiwi, honey, vanilla, cinnamon, cloves, white pepper, notes of anise and peat smoke.
Finish : quite long, with notes of vanilla, honey, apples, white pepper, sea salt and peat smoke.
