Fred Laing’s Old Particular series debuted in September 2013, shortly after the division of the assets of Douglas Laing & Co. between the two Laing brothers.
It is the equivalent of the Old Malt Cask series, which is now owned by Hunter Laing & Co and headed by Stewart. Big Peat is a blended malt made from single malts from Islay; its main components are Ardbeg, Bowmore, Caol Ila and Port Ellen. This edition is an exception; it is a single malt from an undisclosed distillery, part of the Big Peat formula. Distilled in October 2006, the whisky spent over 15 years in a refill butt cask DL 15586, and was bottled at 48.4% abv in February 2022 in an edition of 763 bottles.
Nose : sweet and smoky, slightly mineral, barley malt, vanilla, caramel, barbecue sauce, orange peel, ginger, a pinch of pepper and oak.
Palate: peat smoke, sea breeze, grilled pork neck, salted caramel, vanilla, popcorn, mocha, ginger and a touch of cinnamon.
Finish: medium long, with notes of peat smoke, iodine, salted caramel, white pepper, ginger and tar.
