Fred Laing’s Old Particular series debuted in September 2013, shortly after the division of the assets of Douglas Laing & Co. between the two Laing brothers.
It is the equivalent of the Old Malt Cask range, which is owned by the newly formed Hunter Laing & Co. and chaired by Stewart. Old Particular comprises single malt and single grain whiskies bottled in single cask. The Deanston 12 year old on display here was distilled in November 2009 and aged in a refill hogshead cask (DL 16330). Bottled in September 2022 at 48.4% abv, natural colour and unchill-filtered in an edition limited to 293 bottles. Based in the southern Highlands, Deanston Distillery has two pairs of stills and can produce 3 million litres of distillate per year.
Aroma : roasted grains, sponge cake, vanilla, brown sugar, apples, pears, lemon jam, white pepper, notes of potpourri, hay and cedar.
Palate: mild, breakfast cereal, vanilla, apple pie sprinkled with brown sugar, lemon peel, a touch of ginger and white pepper and toasted oak.
Finish : medium long, with notes of breakfast cereal, honey, vanilla, apples, lemon pepper and oak.
