Fred Laing’s Old Particular series debuted in September 2013, shortly after the division of the assets of Douglas Laing & Co. between the two Laing brothers.
It is the equivalent of the Old Malt Cask range, which is now owned by Hunter Laing & Co. and of which Stewart is chairman. Old Particular comprises single malt and single grain whiskies bottled in single cask. The Glencadam 15 year old presented here was distilled in July 2004 and aged in a refill bourbon cask (DL 13538). Bottled in August 2019 at 48.4% abv, natural colour and non-chill-filtered in an edition limited to 247 bottles. Glencadam Distillery is based in the Eastern Highlands. Since 2003, it has been owned by Angus Dundee plc, a renowned producer of blended whiskies. Glencadam currently operates seven days a week, producing 1.3 million litres of alcohol per year.
Nose: breakfast cereals, yeast cake with butter, apples, bananas, pineapples, vanilla, milk fudge, notes of potpourri and toasted oak.
Palate: vanilla pudding, honeycomb, apples, pears, bananas, butter cookies, a hint of cinnamon, white pepper and toasted oak.
Finish: quite long, with notes of vanilla, honey, cinnamon buns, apples, pears and oak.
