The Dingle Whiskey Distillery is based in the town of Dingle, County Kerry.
It was founded in 2012 by Olivier Hughes, Liam LaHart and Peter Mosley, who founded the Porterhouse Brewing Company in 1996. Distillation of vodka and gin began in October 2012, with the first barrel of whiskey being filled on December 18 of that year. The plant produces both single malt and single pot still whiskey, both distilled three times. The fifth and final edition of Dingle Single Pot Still Small Batch whiskey presented here was blended from distillates aged exclusively in bourbon barrels and bottled at 46.5% abv in spring 2022. 8,000 bottles went on sale.
Aroma : vanilla, salted caramel, honeycomb, ripe apples, orange peel, coconut flakes, cinnamon buns, traces of pine needles and oak.
Taste : vanilla cream, white chocolate, marzipan, cappuccino, stewed apples sprinkled with cinnamon, candied ginger and a trace of pine resin.
Finish : medium long, with notes of apples, vanilla, cinnamon, cloves, fresh herbs and a slight bitterness of oak.
