The Dalmore Distillery has been producing whisky since 1839, and since 1960 under the ownership of Whyte & Mackay, a renowned producer of blends (in 2014, Whyte & Mackay's assets were taken over by the Filipino concern Emperador Inc.).
The Dalmore single malt character is often attributed to its use of sherry casks in the maturation process, although a significant proportion of the spirits start their maturation in bourbon casks. The Dalmore Sherry Cask Select presented here joined the permanent range in October 2020. After 10 years of maturation in bourbon casks, the whisky spent an additional two years in Oloroso and Pedro Ximénez sherry casks (American and European oak) from three renowned sherry producers – Tevasa, Vasyma and Paez.
Nose: pronounced notes of sherry, toffee, honey, raisins and sultanas, candied orange peel, maple syrup, dark chocolate, vanilla, ginger and hazelnuts.
Taste: dark chocolate, Christmas cake, caramel, marzipan, black cherries, roasted almonds, cloves, cinnamon, a bit of ginger and black pepper.
Finish: quite long, with notes of dark chocolate, raisins, roasted nuts and almonds, mango, cinnamon and candied ginger.
