Dalmore Distillery, based in the Northern Highlands, has been producing whisky since 1839, and since 1960 under the ownership of Whyte & Mackay, a renowned producer of blends (in 2014, Whyte & Mackay's assets were acquired by Filipino concern Emperador Inc.).
The Dalmore single malt character is often attributed to its use of sherry casks in the maturation process, although a significant proportion of the whisky begins its maturation in bourbon casks. This whisky, distilled in 2007, confirms that rule. After years in American oak casks, it was transferred to Matusalem, Amoroso and Apostoles sherry casks and Marsala casks, and then bottled at 46.5% abv in 2022.
Nose: blooming orchard, acacia honey, toffee, vanilla, ginger cake, icing sugar, sultanas, orange peel, dried dates, mocha, cinnamon and oak.
Taste : vanilla cream, honey-roasted almonds, milk fudge, tangerines and oranges, raisins, cinnamon buns, candied ginger, cloves and oak.
Finish : quite long, with notes of sweet bread, honey, vanilla, cinnamon, cloves, ginger and oak.
