Westland Distillery, based in Seattle, Washington, is one of America's most interesting producers of single malt whiskey.
It was created in 2010 and acquired by Rèmy Cointreau in 2017. Westland Colere debuted in 2021 in the "Outpost" series. The word "Colere" translates from Latin to "cultivate" and in this case refers to the barley varieties from which subsequent editions are/will be distilled. The first edition was based on the six-row winter Alba variety, the second presented here on the two-row Talisman variety, also winter. The fermentation process used Belgian brewing yeast, while the maturation lasted over 4 years in first-fill bourbon barrels (58%) and refilled Cooper's Reserve barrels from Independent Stave Company (42%). The edition consisted of 3,000 bottles.
Aroma : vanilla, honey, dried lemon peel, raspberry bun, strawberry compote and notes of toasted oak.
Palate : malty, brown sugar, vanilla pudding, dark chocolate orange peel, multi-berry jam and a bit of oak.
Finish : medium long, with notes of barley malt, vanilla, dark chocolate, orange peel and oak.
