Hinch Distillery planned its inaugural distillation for autumn 2020, but the grand opening did not take place until April 2021.
The distillery buildings are situated on the Killaney Estate in the town of Ballynahinch, south of Belfast. The driving force behind the project is Dr Terry Ross, a businessman and OBE, current chairman of the Northern Ireland Red Cross. Hinch Whiskey debuted in 2019 in several versions and includes blends, single malts and single pot stills. The Hinch Distillers Cut presented here is a standard blend made from young, triple-distilled malt and grain whiskeys aged in American oak barrels.
Aroma : cereal, breakfast cereal, brown sugar, vanilla, sponge cake, apples, pears, walnuts and oak.
Palate : vanilla, sweet cereal, golden syrup, honey, caramel, orange peel, apples, lemongrass, white pepper and oak.
Finish: medium long, with notes of vanilla, brown sugar, honey, white pepper, hay and oak.
