The name of the Don Papa brand is a tribute to a historical figure, a fighter for the liberation of the Philippines from the Spanish rule at the end of 19th century, Dionisio Magbuelas, commonly known as Papa Isio.
The brand was created by Stephen Carroll for the Bleeding Heart Company. Manufactured on the Philippine island of Negros, it is supposed to be the world’s first single island rum from the Philippines. Don Papa Masskara rum is distilled in traditional stills and infused with calamondin fruit, a hybrid of sour mandarin orange and kumquat. The flavour is enhanced by an addition of honey and siling labuyo chili pepper, cultivated in the Philippines.
Nose: Rich honeyed nose with a hint of fresh citrus.
Palate: Smooth and fruity, with notes of honey, candied fruits, sweet citrus and sugar cane.
Finish: Long and complex, with notes of tropical fruits and spices.
