Noah's Mill Bourbon debuted in the mid-1990s as part of Kentucky Bourbon Distillers' Boutique Bourbon Collection .
For a dozen or so years, Noah's Mill was a 15-year-old bourbon, and since 2012 it has been bottled with an age statement. It is not known which distillery is behind this brand, we have heard that Noah's Mill is a blend of three bourbons, including one wheat. The owners of Kentucky Bourbon Distillers, the Kulsveen family, have excellent connections among Kentucky distillers, so their access to the stocks of basically every major whiskey producer in the state is almost unlimited. Noah's Mill is one of a handful of bourbons offered at barrel strength; in 2005 it won a gold medal at the International Wine & Spirits Competition .
Nose : sweet, Christmas fruitcake, toffee, vanilla, milk chocolate, raisins, baked apples, mixed nuts, notes of cinnamon and toasted oak.
Palate: rich, dried plums and figs, caramel, vanilla, toffee, roasted walnuts, cocoa powder, a hint of nutmeg and burnt oak.
Finish: long, with notes of dried fruit, caramel, toffee, nutmeg, dark chocolate and oak.
