Highland Park is one of two distilleries distilling in Orkney today.

Equipped with two pairs of stills, it produces almost 2.5 million liters of distillate per year. In the last decade, the popularity of the Highland Park single malt has grown significantly, reaching sales of over 2.2 million bottles per year. Distilled on August 24, 2000, it was aged in bourbon barrel no. 800268 and bottled at cask strength (56.1% abv) and without chill filtration in The Cask Strength Collection. The edition consisted of 194 bottles.

Aroma : heather honey, vanilla, shortbread biscuits, apples, grapes, lemons, coconut flakes, herbal mixture, some wax, traces of iodine and peat.

Palate: slightly waxy mineral, green apples, grapefruit, honeyed peanuts, lemon pepper, herbs, smoked fish and peat smoke in the background.

Finish : quite long, with notes of honey, salted caramel, baked apples, herbs, pepper, peat and oak.
