Bimber Distillery, based in West London, has been operating since 2016. It was founded by Dariusz Płażewski, a Polish emigrant whose grandfather produced moonshine himself during the communist era of alcohol rationing.
This small distillery became famous as a producer of single malt whisky, but its first products were vodka and gin. Gin is produced in a copper still based on wheat spirit. Bimber London Dry Gin debuted in late 2016 and gained considerable popularity, over the next few years Kumquat and Da Hong Pao Tea gins joined. In the formula of the latter, in addition to the four basic ingredients - juniper berries, coriander, angelica root and orris root - there was one of the most expensive teas in the world, Da Hong Pao (a variety of Oolong tea), which is subjected to a week-long maceration. In 2019, Bimber Da Hong Pao Tea Gin won a silver medal at the International Wine & Spirits Competition.
Da Hong Pao Tea Gin offers a complex aromatic bouquet dominated by notes of slightly smoky tea and juniper. The taste is a combination of floral notes, charcoal and a fading trace of smoke. This gin tastes great with Fever Tree Indian tonic and lemon zest.
