The London Bimber Distillery was established in 2016 by Dariusz Płażewski, a Polish emigrant whose grandfather produced moonshine himself during the times of alcohol rationing in the Polish People's Republic.
This small distillery produces gin and whisky. The debut of Bimber's single malt in 2019 caused quite a stir in the UK, with the first batch selling out within hours. Apogee XII is the company's blended malt offering. It is a blend of single malts from the Highlands and Speyside aged for at least 12 years and finished in American oak barrels that previously housed the award-winning Bimber's London Single Malt.
Nose: apricots, honeydew melon, baked apples sprinkled with cinnamon, rose water, honey, vanilla, notes of ginger and nutmeg and a trace of geranium.
Palate : peaches, apricots, oranges, vanilla, golden syrup, honey, cinnamon, a dash of white pepper, toasted oak and mint leaf.
Finish : medium long, with notes of toasted oak, vanilla, summer fruits, honey, pepper and cinnamon.
