Signatory Vintage, founded in 1988 by Andrew and Brian Symington, is a leading independent publisher and distributor of whisky.
Few people remember that Symington started with just £100,000 and nearly went bankrupt several times in the first five years of operation. The name "Signatory" means Signatory and originally Symington intended to hire someone famous to sign each edition. The first cask of whisky bottled by Signatory was Glenlivet 1968, but before the company found the right signatory, there was no trace of the whisky. The Highland Park presented here, distilled on 23 November 1972, spent 18 years in cask no. 9017 and was bottled at 56% abv in February 1991, in an edition of 600 bottles.
Nose: strong sherry notes, heather honey, crème brûlée, caramel, nougat, raisins and sultanas, Christmas gingerbread, grilled pineapple, beeswax and peat smoke in the background.
Palate: honey, chocolate raisins, sugared almonds, caramel, bananas, orange jam, black cherries, dried figs, peat smoke, sherry and oak.
Finish : long and intense, with notes of sherry, dried fruit, honey, milk chocolate, a touch of nutmeg and peat smoke.
