Signatory Vintage, founded in 1988 by Andrew and Brian Symington, is a leading independent publisher and distributor of whisky.
Few people today remember that the Symingtons started with just £100,000 and nearly went bankrupt several times in their first five years. The name "Signatory" means "Signatory" and the brothers originally intended to hire someone famous to sign the labels of each edition. The first cask of whisky bottled by Signatory was Glenlivet 1968, but before the company found the right signatory, there was no trace of the whisky. The Dallas Dhu presented here, distilled on 21 February 1978, spent 23 years in a sherry butt no. 345 and was bottled on 24 August 2001 in an edition of 548 bottles.
Nose : pleasant notes of sherry, honey, caramel, vanilla pudding, maple syrup, hazelnuts, milk chocolate, allspice, hints of hay and oak and a distant trace of smoke.
Palate: vanilla cream, honey-roasted almonds, milk chocolate, cherries, orange peel, quince jam, lemongrass, candied ginger and oak.
Finish: medium long, with notes of milk chocolate, ginger cookies, cinnamon, a touch of vanilla and a light smoke in the background.
