Fred Laing’s Old Particular series debuted in September 2013, shortly after the division of the assets of Douglas Laing & Co. between the two Laing brothers.
It is the equivalent of the Old Malt Cask series, which is owned by the newly formed Hunter Laing & Co and headed by Stewart. Old Particular comprises single malt and single grain whiskies bottled in single cask. The Aultmore 15 year old on display here was distilled in July 2006 and aged in a refill hogshead cask (DL 15588). Bottled in February 2022 at natural colour, 48.4% abv and non-chill-filtered in an edition limited to 444 bottles.
Aroma : mild, delicately floral, bouquet of wild flowers, apples, pears, lemon peel, vanilla, white pepper, notes of ginger, lemongrass and oak.
Palate: vanilla, milkshake, sugared peanuts, green tea, candied citrus peel, stewed apples, white pepper, ginger, notes of hay and oak.
Finish : medium long, with notes of vanilla, toffee, honey, cinnamon, white pepper, cloves and oak.
