Balcones, the first legal whiskey distillery in Texas since the end of Prohibition, was established in 2008. It is a unique distillery in every way, with an extraordinary range of whiskeys, as exemplified by the Brimstone presented here.
It is distilled from 100% New Mexico Hopi blue corn, then smoked using local scrub oak. The owners do not disclose the details of the smoking process, calling it a secret process. It is most likely done using a pump that injects smoke into the fresh distillate. In our opinion, Balcones is the most interesting American micro-distillery, and its whiskeys are so popular that the company is only able to fulfill about 12% of orders.
Aroma: smoke from several grills sizzling meat, barbecue sauce, dried plums, caramel, vanilla, pepper and sulfur of a lit match.
Palate : clouds of smoke, meat at a grilling competition, chili pepper, bitter orange jam, dark roasted coffee, notes of tobacco and charcoal.
Finish : endlessly long and smoky, grilled meats, charcoal, burnt sugar and pepper.
