M&H Distillery (originally Milk & Honey) is the first Israeli whiskey producer.
It was established in 2013 in Tel Aviv and although it can produce 800 thousand distillate per year, it uses about 25% of its potential. The warm climate of Israel (temperature from 16 to 40ºC) undoubtedly speeds up the maturation process, but also increases the so-called "angel's share" to even a dozen or so percent per year. After the success of M&H Elements, master distiller Tom Goren proposed the Apex series (the word "apex" means "peak"), originally consisting of four whiskies: White Wine Cask, Rum Cask, Cognac Cask and Pomegranate Wine Cask. Apex Batch # 004 is a whisky distilled on December 24, 2017 and aged in Jamaican and Cuban rum barrels. Bottled on January 10, 2021 at a barrel strength of 57.3% abv in an edition of 1,420 bottles.
Nose : sweet, caramel, vanilla, apples, peaches, pineapples, coconut water, chamomile tea, a touch of cinnamon and toasted oak.
Flavor : vanilla pudding, caramel, sweet breakfast cereal, coconut, apples, oranges, lime jam, licorice, candied ginger and oak.
Finish : medium long, with notes of candied lemon and orange peel, vanilla, caramel, baked apples, cinnamon and oak.
