M&H (originally Milk & Honey) Distillery was established in 2013.
The distillery is based in Tel Aviv and is the first Israeli producer of whiskey (kosher, of course). Its production capacity is 800 thousand liters of distillate per year (currently used at 25%). In the early years, the distillery was advised by Dr. James Swan († 2017), one of the most distinguished independent master distillers. Due to the temperature reaching 40ºC in summer, distillates mature much faster than in Scotland. In 2020, master distiller Tom Goren, proposed the Apex series (the word "apex" means "peak"), originally consisting of four whiskeys: White Wine Cask, Rum Cask, Cognac Cask and Pomegranate Wine Cask. Apex Batch # 001 is a whiskey distilled on May 16, 2017 and aged in local chardonnay barrels. Bottled at cask strength 61.2% abv on May 30, 2020 in an edition of 1,441 bottles.
Aroma : chardonnay, bouquet of garden flowers, peaches, apricots, pears, vanilla, white chocolate and light mineral notes.
Palate : dried apricots, grapefruits, baked plantains, honeyed peanuts, lemongrass and a pinch of white pepper.
Finish : medium long, with notes of citrus, peaches, green tea, toasted oak and a trace of pine needles.
