According to a Heaven Hill Distillery spokesman, Mellow Corn is currently the only corn whiskey offered in Bottled-in-Bond.
The term means that the whiskey was distilled in one season at a specific distillery, aged in federally regulated warehouses for at least four years, and bottled at 100 proof (50% abv). The label must state where the whiskey was distilled and bottled. Mellow Corn is distilled from a mash of 90% corn (the other 10% is shared between rye and malted barley) and aged for four years in refill American oak barrels. Heaven Hill is the only commercial producer of this whiskey today.
Nose: cooked corn, vanilla, plantains, bubble gum, roasted peanuts, traces of oak and ginger.
Taste : true to the aroma, corn, vanilla, banana chips, toffee, oak, mixed nuts and a hint of spice.
Finish : medium long, slightly alcoholic, with notes of corn, vanilla, pepper and oak.
