Highland Park, founded in 1798, is based in Kirkwall, the capital of Orkney, and is currently Scotland's most northerly distillery.
The plant has two pairs of stills and produces 2.5 million liters of distillate per year. Highland Park malts its own barley (its own malt covers about 30% of demand) using local peat, which, due to the lack of trees in Orkney, consists mainly of heather, which gives the whisky its characteristic flavor. The Highland Park presented here, distilled on July 6, 1998, spent 23 years in hogshead cask no. 900366, after which it was bottled by Signatory Vintage on September 1, 2021 exclusively for La Maison du Whisky in Paris in an edition of 718 bottles. The shop celebrated its 65th anniversary a year earlier.
Nose : fresh, apple blossoms, verbena, mint, barley malt, green apples, kiwi, pears, walnuts, heather honey, vanilla, a pinch of salt and a trace of smoke in the background.
Palate : vanilla cream, honey, toffee, grapes, oranges, apples, nectarines, mixed nuts, candied ginger, lemongrass, notes of peat and oak.
Finish : long, with notes of honey, vanilla, green tea, cinnamon, ginger, orange, banana, tobacco and oak.
