Journeyman Distillery was founded in 2010 in Three Oaks, Michigan, as an investment by Bill Welter.
In 2000, Bill traveled to Scotland to study the history of golf and learn more about the sport, but his passion for whiskey soon outstripped his interest in golf. Upon returning to the States, Bill interned at Koval Distillery in Chicago before striking out on his own. Journey Corsets, Whips & Whiskey is a 2018 offering from the company (the distillery is located in the former Featherbone Corset & Buggy Whip Factory, hence the name). The spirit is distilled from 100% locally grown wheat, aged in heavily charred American oak barrels, and bottled at barrel strength.
Nose: fairly mild, caramelized brown sugar, honey, cinnamon, cloves, fennel, cocoa powder and traces of pencil shavings.
Palate : sweet and spicy, caramel, toffee, black pepper, cinnamon, anise, orange zest, dark chocolate and charred oak.
Finish : medium long, with notes of caramel, cinnamon, cherries, raisins and charred oak.
