Highland Park, based in the Orkney capital of Kirkwall, is Scotland's most northerly distillery.
It has been producing whisky since 1798 and is now part of the Edrington Group. The distillery malts its own barley (its own malt covers around 30% of demand) using local peat. Given the lack of trees in Orkney, the local peat consists mainly of heather, which gives whisky its characteristic flavour. The basic commercial offer lists whisky in the age range of 12 to 40 years and several versions of the so-called no age statement. Highland Park 40 years old debuted in 2008. The 2019 edition presented here is based on five barrels of whisky (so-called refill casks) distilled before 1979. In 2008, their contents were mixed and poured into fresh sherry casks (American oak). The edition consisted of 1684 bottles.
Nose : very rich, dark chocolate, vanilla cream, honey, raspberries, cantaloupe, orange peel, pears, raisins, herbal mixture, nutmeg, tobacco, notes of wax and peat.
Palate : raisins and sultanas, blood oranges, blackberries, cherries, honeyed almonds, caramel, chocolate, cinnamon, nutmeg, pipe tobacco and peat smoke in the background.
Finish: very long, with notes of honey, dark chocolate, mixed berries, ginger, nutmeg, oak and fragrant smoke.
