Papa’s Pilar Distillery is a rum factory located at Key West, Florida, and closely linked to the figure of Ernest Hemingway, the great American writer, traveller, adventurer, bon vivant and conservationist.
The distillery was named after Hemingway’s beloved boat, Pilar, and is actually located very close to the place it used to me moored. According to the manufacturer, the Papa’s Pilar rum was created so as to harness that spirit of adventure associated with Hemingway’s favourite boat. The company’s rums are made from spirits distilled both at the Papa’s Pilar Distillery and spirits imported from other manufacturers in the Caribbean. Papa’s Pilar rums contain spirits from Barbados, Dominican Republic, Panama and Venezuela.
Papa’s Pilar 24 Solera Profile Dark Rum is a blend of rums from Barbados, Dominican Republic, Panama, Venezuela and Florida. It was made from molasses, distilled in column and pot stills, matured in American oak ex-bourbon barrels, blended in a solera system and finally finished in ex-bourbon, ex-port and ex-sherry barrels.
Nose: Vanilla, caramel, toffee, dark chocolate, coffee.
Palate: Oak, tropical fruits. bananas, gingerbread, dark chocolate, vanilla, caramel, spices.
Finish: Molasses, vanilla, caramel, cinnamon.
