The Dalmore Distillery has been producing whisky since 1839, and since 1960 has been owned by Whyte & Mackay, a well-known producer of blends (in 2014, Whyte & Mackay's assets were taken over by the Filipino concern Emperador Inc.).
The Dalmore single malt character is often attributed to the use of sherry casks in the maturation process, although a large proportion of the whisky begins its maturation in bourbon casks. Distilled on 6th March 1992, this whisky was aged in a 1750 bourbon cask for over 28 years. Bottled on 24th November 2020 at 43.7% by Signatory Vintage in the Cask Strength Collection in an edition limited to 223 bottles.
Nose : vanilla pudding, toffee, honey, almond croissant, coconut flakes, pears, orange peel, milk chocolate, cinnamon, notes of potpourri and polished oak.
Palate: vanilla, milkshake, caramel, honeyed almonds, peaches, apples, pears, orange peel, cinnamon, white pepper, candied ginger and oak.
Finish: long, with notes of vanilla, caramel, toffee, cinnamon, milk chocolate, citrus and oak.
