The Barnard family of merchants settled on the island of St. Lucia in the mid-19th century. They cultivated sugar cane, among other things. It took until the third generation, however, for 21-year-old Denis Barnard to come up with the idea of using the crop to produce rum.
The Dennery distillery was established at that time, where the young entrepreneur began his experiments with blending distillates from various types of strippers and distillation regimes. His work inspired his son, Laurie Barnard, who decided to subject the effects of blending distillates from stills and column stills to further maturation in oak barrels.
The result was an extremely smooth, quality spirit with a complex character, considered today to be the standard for rum from the island of St. Lucia. And, incidentally, this is how the Chairman's Reserve series of rums was created.
Chairman's Reserve 2011 Master's Selection for Dom Whisky is one of two editions of rum created at Saint Lucia Distillers, selected and bottled especially for Dom Whisky. It is a distillate from the Coffey still operating on the distillery's premises. The rum, distilled in 2011, was placed in a single, additionally charred red wine barrel, where it spent 9 years. Its contents were enough to fill 406 individually numbered bottles.
