Fred Laing’s Old Particular series debuted in September 2013, shortly after the division of the assets of Douglas Laing & Co. between the two Laing brothers.
It is the equivalent of the Old Malt Cask range, which is owned by the newly formed Hunter Laing & Co and headed by Stewart. Old Particular comprises single malt and single grain whiskies bottled in single cask. The Ledaig 12 year old on display here was distilled in January 2008 and aged in a refill sherry butt (DL 14561). Bottled in December 202 at 48.4% ABV, natural colour and unchill-filtered in a limited edition of 375 bottles.
Nose: peat smoke, tarred ropes, salty breeze, wet sand and shells, barley malt, caramel, vanilla, white pepper, lemon peel and oak.
Palate : slightly oily, peat smoke, seaweed salad, roasted almonds, vanilla salt, lemon peel, licorice, pepper, ginger, notes of tobacco and oak.
Finish: quite long, with notes of peat smoke, seaweed, salted caramel, toffee, pepper, smoked meat and oak.
