Fred Laing's XOP series debuted in 2014, a dozen or so months after the division of Douglas Laing & Co.'s assets between the two Laing brothers.
XOP stands for Xtra Old Particular and refers to the finest single malt and single grain casks resting in the family’s stockpiles. This Craigellachie 25 year old was distilled in September 1995 and aged for over a quarter of a century in a refill sherry butt (DL no. 14966). Bottled in June 2021 at cask strength (53.7% abv) and non-chill-filtered in a limited edition of just 219 bottles. (Producer’s note.)
Aroma: slightly waxy lemon and citrus to start, followed by freshly roasted cashews, golden syrup and homemade pastries.
Taste : On the palate a combination of Scottish malted barley, oak and premium leather.
Finish: exceptionally long, baked apples with cinnamon, strawberry cotton candy and raspberry crème brûlée.
