Ghost Owl Pacific Northwest Small Batch Whiskey /45%/ 0.75l

Ghost Owl whiskey is a product of Parliament Distillery, based in Sumner, Washington. The distillery was founded in 2012 by Jarrett Tomal, a former construction worker, and two friends.

Its name (a barn owl) recalls an episode from the past when Jarrett looked into an old shed on a construction site and found an old still and an owl sitting on it. Ghost Owl Pacific Northwest whiskey is an unusual blend, a blend of their own, young single malt whiskey, distilled from locally grown barley and aged in quarter casks, and bourbon aged for 4 to 5 years (the latter is around 40%). The whiskey is bottled at 45% abv in small batches.

Nose : sweet cereal, vanilla, caramel, maple syrup, toffee, buttered toast, a hint of cloves and cinnamon and a hint of oak.

Palate : vanilla, honey cereal, roasted peanuts, brown sugar, buttered popcorn, cinnamon and a pinch of ginger.

Finish : medium long, with notes of vanilla, caramel, toffee, cinnamon and a subtle bitterness of oak.
