Devil's River Distillery is an investment by Mike Cameron, previously co-founder of Rebecca Creek Distillery.
Originally operating in Dallas (Texas), since December 2020 its headquarters is San Antonio, specifically a historic building in the city center (Burns Building) renovated and adapted for the needs of whiskey production. The name of the distillery refers to the "Devil's River" flowing through the city, from which the plant draws water for production. Devils River whiskey debuted in late 2017 in two versions - Small Batch Texas Bourbon and Small Batch Texas Rye. They were soon joined by the Barrel Strength version bottled at 58.5%. The bourbon is distilled from a mash of 75% corn, 21% rye and 4% malted barley and aged in barrels with a fourth degree of roasting.
Nose: surprisingly fruity, apples, pears, peaches, vanilla, caramel, cinnamon, a dash of pepper and cloves and charred oak.
Palate : vanilla pudding, honey, caramel, cinnamon, baked apples, plums, mint leaf, black pepper and charred oak.
Finish : medium long, with notes of vanilla, caramel, cinnamon, pepper, a touch of ginger and oak
