New Holland Brewery & Artisan Spirits is a Michigan-based company that has been operating since 1996, initially as a micro-brewery, and since 2005 as a distillery.
In 2011, it installed an additional 3,000-litre still, which increased its potential tenfold. Its first success on the whiskey market was a bourbon finished in barrels from its own beer, which motivated the owners to experiment further, this time with rye whiskey. It is distilled from a mash of 51% rye and 49% malted barley, and after maturing in fresh, charred American oak barrels, it is finished for 3 months in barrels from Dragon's Milk beer.
Nose: slice of wholemeal bread, stout, cherries, burnt sugar, cocoa powder, notes of leather, dried mushrooms and oak.
Palate : chocolate malt, rye bread toast, dried berries, caramel, nutmeg, notes of cloves and tobacco.
Finish : medium long, sweet, with notes of barley malt, chocolate, caramel and a slight oak bitterness.
