The small Caribbean island of Trinidad once boasted as many as 50 rum factories.
The Caroni Distillery was founded in 1918 on the site of an old sugar mill. The distillery operated both traditional stills and column stills, and the rum produced there was heavy, just right for supplying the British Navy. In 2001, the distillery was sold to Angostura and closed for good a year later. Caroni rum was given a second life by Luca Gargano's visit to Trinidad in 2004, when he discovered a forgotten warehouse of barrel-aged rum.
Caroni 1994 17 Years High Proof Heavy is a molasses-based rum, distilled in 1994 and matured for 17 years in American oak ex-bourbon barrels. Bottled in 2021 as a blend of 23 barrels, in an edition limited to 7,142 bottles. The rum matured in a tropical climate, first in Trinidad and then in Guyana since 2008.
Nose: Complex and rich. Notes of solvent, gum, varnish, anise, butter accents, mango, crème brulee.
Palate: Complex and harmonious. Notes of leather, nail polish, mango, licorice, raspberries, passion fruit, spices.
Finish: Long, oak, licorice, spices.
