Fred Laing's Old Particular series debuted in September 2013, shortly after the division of Douglas Laing & Co.'s assets between the two Laing brothers.
It is the equivalent of the Old Malt Cask range, now owned by Hunter Laing & Co, of which Stewart is chairman. Old Particular comprises single malt and single grain whiskies bottled in single cask. This whisky was distilled at ‘Orkney’s Most Notable Distillery’ (Highland Park?) in September 2002 and spent over 18 years in a refill puncheon cask (DL 14563). Bottled in December 2020 at 48.4% abv and non-chill-filtered in a limited edition of 495 bottles.
Aroma : barley malt, honey, vanilla, orange peel, lemon jam, dried dates and figs, peaches, allspice, notes of oak and peat smoke.
Palate : slightly oily, maple syrup, honey, vanilla, toffee, rum-soaked raisins, apples, sugared nuts, notes of ginger and nutmeg and a trace of smoke in the background.
Finish: medium long, with notes of honey, milk chocolate, orange peel, a pinch of spices, oak tannins, raisins and smoke.
