The extraordinary Dalmore Constellation Collection saw the light of day on 1 May 2012. It is the work of Richard Paterson, legendary Whyte & Mackay blender.
The collection consists of 21 single cask whiskies and offers a spectrum of vintages distilled in the iconic Dalmore Distillery between 1964 and 1992 and aged in the finest barrels in the distillery's warehouses. Each of them is presented in a hand-crafted crystal decanter decorated with silver antler and rests in an elegant lacquered box. We present here a whisky distilled on February 1, 1980 and aged for over three decades in a No. 495 American white oak barrel. The contents of the barrel translated into 227 bottles. All whiskies that make up the collection are bottled in their natural color and at cask strength. (Official tasting note.)
Color : glow of amber, gold and honey with a slightly yellow glow.
Aroma : sandalwood, pancakes with lemon cream, juicy peaches, a bouquet of freesia, ylang-ylang, honeycomb, cinnamon and gooseberries.
Palate: candied dried fruit, vanilla, panna cotta, canned tropical fruit mix, fresh pineapple, caramelized tangerines, ginger chocolate cake and vanilla egg custard.
