Stauning Distillery, Denmark's oldest whisky distillery, was established in 2005 by 9 friends with no experience in whisky production.
Lack of knowledge proved no obstacle and after 4 years the distillery was moved to a much larger facility on the farm, and a contract signed in 2015 with Diageo and Distill Ventures provided funds to increase its production capacity to 900 thousand liters of distillate per year. Stauning Kaos is an unusual drink, a blend of three Stauning whiskies in one bottle: single malt, peated single malt and rye whisky aged in American oak barrels. The bottle presented here comes from the second batch from 2020.
Nose: toasted grain, mosses and ferns, fresh oak, vanilla, honey, apples, red berries, cocoa and a distant hint of smoke.
Palate : caramel, vanilla, honey cereal, milk chocolate, raisins, cinnamon, notes of pepper and licorice, pine needles and peat.
Finish : medium long, with notes of peat, vanilla, honey, cinnamon, nutmeg, pine needles and oak.
