The West Cork Distillery has been operating since 2003. Built by John O'Connell and Dennis and Ger McCarthy in Union Hall, after ten years it moved to Skibbereen, where it operates to this day, distilling malt and grain whisky.
Its commercial offer also includes Garnish Island Gin, although gin production accounts for only 5% of the company's turnover. West Cork is based on locally grown grain, distilled in copper stills (there are four of them), and every drop of spirit is distilled three times. The West Cork Blended Whiskey presented here is a blend of 66% grain and 33% malt distillates aged in bourbon barrels, then finished for six months in refill barrels. It is one of a handful of blended whiskeys bottled at cask strength (62% abv).
Nose: slightly alcoholic, sweet cereal, brown sugar, vanilla, toffee, apples, orange peel, freshly cut grass and oak chips.
Palate : sweet cereals, caramel, vanilla, honey, apples, pears, green grapes, notes of fresh herbs and oak tannins.
Finish : medium long, with notes of cereal flakes, herbal mix, white pepper, vanilla and oak tannins.
