Stauning Distillery was established in 2005, making it the oldest whisky producer in its native Denmark.
Founded by 9 friends with no experience in whisky production, it was initially located in a former slaughterhouse, and in 2009 it was moved to a farm adapted for distillation. Two years later, Stauning whisky was served in one of the most popular restaurants in the world, Noma. In 2015, Stauning signed a contract with Diageo and Distill Ventures guaranteeing financing to increase the distillery's capacity to 900 thousand liters of spirit per year. Stauning Rye is 100% Danish whisky, distilled from local rye and malted barley on site in the traditional way, aged in first-fill American oak barrels and bottled without cold filtration.
Aroma : freshly baked wholemeal bread, oatmeal, blackberries, apples, vanilla, cumin, fennel, black pepper and a hint of furniture polish.
Palate: forest berries, slice of wholemeal bread, nectarines, caramel, cinnamon, anise, pepper, notes of licorice and cocoa.
Finish : medium long, with notes of caramel, vanilla, raisins, cinnamon, a bit of tobacco and oak.
