The new century saw Scotland’s largest city of Glasgow welcome a new distillery. The Glasgow Distillery Company, the city’s first licensed distillery in over a hundred years, was established in 2012 by Liam Hughes, Mike Hayward and Ian McDougall.
The distillery, equipped with four stills (one dedicated exclusively to gin), first distilled gin in 2014, and whiskey a year later. The distillery is considered the successor to the Dundashill Distillery, which operated nearby from 1770 to 1902. Makar Gin (the word “makar” means “poet” in Gaelic) debuted in 2014 as the “Original Dry.” It is made with a base of wheat spirit distilled on site, and the formula lists eight botanicals: juniper berries, fresh rosemary, black pepper, coriander seed, licorice, cassia bark, angelica root and fresh lemon. In August 2018, the Makar line was expanded to include Cherry Gin, where ripe cherries and a small amount of red peppercorn are steeped in standard Makar Dry, then pressed to extract maximum aroma and flavor. A year later, Makar Cherry was named “Best Flavoured Gin” in the World Gin Awards.
Makar Cherry Gin can be described as an “autumn gin”. In its aromatic and flavor palette, juniper and pine notes are beautifully balanced by cherries and citrus and vanilla notes. We recommend serving with an ice cube or premium tonic with a drop of lemon juice and a cherry.
