Akashi Whisky is a product of the Eigashima (White Oak) Distillery, which has been operating since 1888. Initially producing sake, it obtained a license to produce whisky in 1919, but did not begin producing it until over 40 years later.
The current distillery was built in 1984 and distills whisky for seven months of the year, while the main source of income remains sake and shōchu. After several years of experimenting with malts with different concentrations of phenol compounds, the company decided to go with minimally peated (5 ppm). Eigashima Shuzo constantly experiments with finishing maturation, the whisky presented here spent three and a half years in cognac barrels, then finished for 10 months in barrel no. 61694 from a white wine from its own vineyard in the Yamanashi region.
Nose : green grapes, lemon peel, green apples, vanilla, honey, a handful of fresh herbs, oak chips and a drop of grappa.
Palate : green apples and grapes, peaches, sweetened lime juice, milk chocolate, ginger, some vanilla and oak tannins.
Finish : medium long, with notes of lemons and limes, apples, lemon pepper, fresh herbs and oak.
