Ballyhoo Whiskey debuted in 2018 in the Irish Connacht Distillery. The whisky comes from an undisclosed distillery, and was distilled from a mash composed of 93% French corn and 7% malted barley.
After maturing for four years in American white oak barrels, the whiskey was finished in port barrels for three to six months. Connacht Distillery was founded in 2014 and is based in Belleek, Ballina, Co. Mayo. It is equipped with three stills designed by one of its founders, Robert Cassell, from a Canadian producer based in Victoria. The whiskey distilled at Connacht Distillery is still awaiting its first release.
Nose : slightly subdued, slightly alcoholic, banana peel, brown sugar, roasted nuts, cantaloupe and a fleeting trace of smoke.
Taste : light, cornflakes, brown sugar, vanilla, banana cake, a trace of dried fruit, a pinch of white pepper and oak.
Finish: medium long, with notes of brown sugar, vanilla, sweet breakfast cereal and a hint of dried fruit.
