Journeyman Distillery was founded in 2010 in Three Oaks, Michigan, as an investment by Bill Welter.
In 2000, Bill traveled to Scotland to study the history of golf and gain a deeper understanding of the sport, but his passion for whiskey soon overshadowed his interest in golf. Upon returning to the States, Bill interned at Koval Distillery in Chicago before striking out on his own. Journeyman Last Feather is distilled from a mash of 60% rye and 40% wheat (both organically grown) and aged in 15-gallon charred barrels. Originally marketed as Ravenswood Rye, the Ravenswood brand was already registered, so the company changed it to Last Feather.
Aroma : cereal-spicy, vanilla, white pepper, pine resin, green bananas, pears, notes of oak and wax.
Palate : vanilla, brown sugar, cinnamon, cloves, white pepper, banana cake, apples, nectarines and a light bitterness of oak.
Finish: medium long, with notes of vanilla, brown sugar, apples, bananas, a touch of cinnamon and oak.
