Ninth Wave Gin is a product of the Hinch Distillery Company, a company whose driving force is Dr Terry Ross, businessman and KBE, current president of the Northern Ireland Red Cross.
The company is currently building its own distillery on the Killaney Estate in Ballynahinch, south of Belfast. It was supposed to start distilling in 2020, but due to the COVID-19 pandemic, the date has been postponed until 2021. The name Ninth Wave is a reference to Celtic mythology, according to which off the coast of Ireland lie islands called the “Otherworld,” inhabited by the sea god Mac Lir. It can only be reached by crossing the ninth wave, the greatest of all waves and the barrier separating the earthly world from the divine. This gin is distilled in a copper still and its formula includes nine botanicals: juniper berries, lemon verbena, cardamom, coriander seed, orange peel, orris root, angelica root, cassia bark and grains of paradise.
In the aromatic bouquet we discover delicate citrus notes, coriander, cinnamon, a bit of cardamom and orange peel balanced by juniper. On the palate stronger tones of juniper and pine needles, verbena, citrus and a bit of mint. We recommend serving with Fever Tree Mediterranean tonic and blood orange.
