Allt-a-Bhainne is a young and very successful distillery in Speyside, built in 1975 by Chivas Bros., then part of Seagram.
Since 2001, all Chivas Bros. assets have been owned by Pernod Ricard, and Allt-a-Bhainne, after a short break (2002-2005), is operating at full steam, producing around 4 million litres of distillate per year, almost 100% of which ends up in blends. This single cask from Douglas Laing & Co.'s Old Particular series was distilled in March 2007 and aged in a refill butt no. DL 13775 for 12 years. Bottled at 48.8% abv and without chill filtration in December 2019 in an edition of 389 bottles.
Nose: barley malt, brown sugar, honey, plums, cherries, red currants, cocoa powder, a touch of nutmeg, leather and oak.
Taste: milk chocolate, cappuccino, caramel, multi-berry jam, white pepper, notes of allspice and tobacco.
Finish: medium long, with notes of milk chocolate, Christmas gingerbread, red berries, allspice, a touch of ginger and oak.
