Product description
Togouchi whisky is a product of the Chugoku Jozo company based in a suburb of Hiroshima.
The company has been operating since 1918 and specializes in the production of sake and shōchu, and added whisky to its offer in the early 1990s. Chugoku does not distill whisky, it imports grain distillate from Canada and malt from Scotland, and they are blended on site and undergo additional maturation. This is done in a 361-meter-long abandoned railway tunnel, where the climate conditions are said to be ideal - 15º C and 80% humidity. Togouchi Sake Finish is the company's proposal from 2020. After the basic maturation period in bourbon barrels, the whisky was finished for three months in sake barrels (junmai-shu) of its own production.
Nose : fresh with a subtle note of peat, cornflakes, vanilla, honey, green apples, gooseberries, walnuts and a trace of oak.
Palate: mild, malty, sweet cereals, vanilla, honey, green apples, quince jam, lemon peel, notes of hay and oak.
Finish : medium long, with notes of vanilla, cereal, apples, pears, peat and oak.
