Hibiki is a luxury Japanese blended whisky from the Suntory conglomerate portfolio.
It debuted as a brand in 1989, but has only been catching the attention of whisky lovers for a dozen or so years. In 2015, during the International Spirit Challenge, Hibiki 21 years old won the highest distinction in the blended whisky category , for the third time in a row. The jury called it a "product of particularly high quality". The whisky is a blend of single malts from the Yamazaki and Hakushu distilleries, aged in barrels made of American, European and Japanese oak, and grain distillate from the Chita distillery (all of the aforementioned distilleries belong to Suntory). The word "hibiki" translates from Japanese to "resonance" or "echo".
Nose : sweet with strong sherry notes, sugar-roasted nuts, caramel, maple syrup, a bouquet of dry flowers, dried tropical fruits and peat smoke in the background.
Palate: very mild, chocolate-covered cherries, caramel, vanilla cream, buttered toast, a pinch of cinnamon, some oak and a distant hint of peat smoke.
Finish: long, fruity with a delicate hint of spices and a fleeting trace of peat smoke.
