Koval Distillery was established in 2008 in Chicago and was the first legal distillery in the city since Prohibition.
Its founders and owners are Robert and Sonat Birnecker; Robert was previously the secretary of the Austrian embassy in Washington, while Sonat pursued an academic career as a lecturer in Jewish customs and culture. The distillery distills from organically grown grains supplied by a nearby cooperative. In addition to gin, Koval Distillery offers several whiskeys (Bourbon, Rye, Millet and Four Grain) and fruit liqueurs. Koval Dry Gin debuted in 2015 and was a great success. In the year of its debut, it won a double gold medal at the World Spirits Competition in San Francisco. The Birneckers do not say much about the gin's formula; out of 13 botanical ingredients, they only reveal juniper, the rest they describe as "woodland spices". Its base is their own rye spirit distilled from organic grain.
Koval Dry Gin is a very elegant, delicately floral gin with aromas of juniper, wildflowers, hibiscus, lime and vanilla. In taste a bit of juniper and pine needles, wild rose jam, lemon peel, white pepper and lemon grass. The Birneckers recommend serving it with tonic, a slice of cucumber and a mint leaf and in Green Market or Basil Gimlet cocktails.
