Hinch Distillery has scheduled its inaugural distillation for autumn 2020. The distillery is situated on the Killaney Estate in the market town of Ballynahinch, south of Belfast.
The driving force behind the project is Dr Terry Ross, a businessman and OBE, current president of the Northern Ireland Red Cross. Hinch Whisky debuted in 2019 and is now available in five versions, including three blends, a single malt and a single pot still. The Hinch Small Batch Bourbon Cask presented here is a standard blend of 75% single grain and 25% single malt aged in bourbon barrels. It is bottled at 43% abv and offered in limited releases.
Nose: mild, honeyed cereal, orange jam, apricots, buttery croissant, vanilla and a hint of walnuts.
Palate: sweet, vanilla cream, maple syrup, honey, cantaloupe, orange peel, coconut flakes, notes of hay and oak.
Finish : medium long, with notes of vanilla, milk chocolate, honey, roasted nuts and a touch of oak.
