Built in 1846, Caol Ila is now the largest distillery on Islay, and an expansion in 2011 raised its annual production capacity to 6.5 million litres, the equivalent of Laphroaig, Bowmore and Ardbeg combined. Although it ranks far behind in the island’s malt sales statistics, its popularity has been growing, thanks in part to independent publishers. The single cask version featured here is Douglas Laing & Co.’s Single Minded range from December 2019. Distilled in August 2009, the whisky spent over 10 years in a hogshead, making 382 bottles. The Single Minded range, a creation of Fred Laing, debuted after the assets of Douglas Laing & Co. were split between Fred and his brother Stewart in 2013.
Nose: peat smoke, seaweed, smoked bacon, lemons, green apples, salted nuts, damp hay and mulch and a hint of tar.
Palate : Peat smoke and cigar ash, vanilla, caramel, croutons, lemongrass, white pepper, lemons, oysters, salted nuts and charred oak.
Finish : medium long, with notes of smoked seafood, lemon, pepper, vanilla, peat smoke and ash.
