Most whisky producers, including of course independent publishers, celebrated the new millennium with commemorative limited editions.
As a rule, these were quite expensive editions of old whiskies offered in a rich presentation. The Signatory Vintage company did not quite follow a similar path, preparing several excellent releases of relatively young, although carefully selected whiskies. One of them was the Caol Ila presented here - distilled on May 2, 1989 and aged in two American oak barrels (no. 2440 and 2441) for 10 years. The Millennium edition hit the market in August 1999 in an edition of 275 1.5-liter bottles.
Nose : peat smoke, buttered toast, vanilla, almond flakes, lemons, green apples, a pinch of white pepper, notes of damp hay and forest floor.
Palate: smoky and sweet, vanilla, butter cookies, brown sugar, apples, grapefruit, lemon jam, walnuts, hints of marzipan, licorice and oak.
Finish: quite long, with notes of vanilla, apples, lemons, licorice, a pinch of sea salt and a whiff of peat smoke.
